Creamy Creamy Sweet Corn and Spinach Soup
After days of glorious sunshine and top temperature, it was a welcome relief when rain drops hit the dry, broiling mother earth. It wasn’t some heavy pour with thunderstorms but a gentle drizzle which urges you to venture out without an umbrella. You can feel the green grass blades dancing with new lease of life when your bare feet touch them. As they tickle your bare feet, you curl your toes and lift your face to the vivid blue sky dotted with few heavy grey clouds. And then suddenly your are transformed to magical wonderland when your eyes blurred by the water droplets covering your lashes catches one of the most wonderful sights created by the nature, bright and colourful rainbow. You can’t help but wonder about the tales of pot of gold buried at the end of this colourful arch told umpteen numbers of times by your nana…
Oh, how I love summer rains and rainbows! They always make me walk down the memory lane to my childhood days when I would eagerly wait for the first monsoon rain. No matter what, I had to get drenched from top to toe, dancing on terrace with my sister, while my mother urged us to get inside the house and stay dry! While we shivered in delight, and also by cold, our mother would take us to the bathroom to pour hot water on our head and then cover us warmly in fluffy towel and her warm saree pallu. A moment like this makes our childhood a happy and memorable one…
And I want to create memorable moments like this for my little one which he can cherish… Moments which brings small smile on his face whenever he reminiscence from past. I know, I know that he’s just a baby now… But I still feel that it is never too early to create happy memories!
Creamy Creamy Sweet Corn and Spinach Soup
It was on such lovely rainy day and I had bunch of
fresh spinach/palak leaves in fridge. Since my lil dumpling is showing great interest in
soups these days, I decided to make some
creamy spinach soup with his most favourite veg,
sweet corns. Yes, my baby loves his sweet corns and he will happily eat them at any time of the day even if his stomach is full and ready to burst!!! Every mother can relate to me when I tell what a great pleasure it is to watch your child eat. And it becomes all the more pleasurable when he enjoys and relishes every mouthful. My lil sweet pea is at a stage where he takes out everything that goes into his mouth to investigate and closely inspect them and then puts it back in his mouth to chew with his front teeth! :) Well, motherhood is simply amazing as you learn and discover something new everyday with your child.
Coming back to recipe, this simple
Creamy Sweet Corn and Spinach Soup is on milder side when it comes to my usual
soup recipes as I made it for my lil pea. But it is not a bland
soup by any means. These days my lil dumpling is leaning more towards the savoury and, sometimes, little spicy food. So I just added one small green chilli along with whole spices like cinnamon and cloves. This is one of the simple
soup recipes I have made so far that take less than 15 minutes from start to end and yet never put me down when it came to flavour. I didn’t cook the spinach too much as I wanted it to retain its nutrition, natural taste, as well as its vibrant colour. But if you are not too keen on little raw tasting spinach, then simply cook for another 5 more minutes and you will definitely fall in love with this delicious bowl of soup. Fresh Green Spinach/Palak
Sweet Corn Kernals
Creamy Sweet Corn and Spinach Soup
Prep Time: 5 mins
Cooking Time: 10 mins
Serves: 3-4 people
Recipe Level: Easy/Beginner
Spice Level: Mild
Shelf Life: 2 days when refrigerated and 1 week when frozen
Serving Suggestion: As a starter or with any bread as a meal in itself
Ingredients:
1 bunch Spinach/Palak leaves with tender stems (approx 4 packed cups), washed and roughly chopped
1 cup Sweet Corn Kernels (fresh/frozen/canned)
1 medium Onion, finely chopped
1 tsp Garlic, finely chopped
1 Green Chilli, slit
½ cup Milk (Optional)
½ tbsp Oil/Butter
1 tsp fresh Lime Juice
Salt to taste
Spices Used:
1 inch Cinnamon Stick
2 Cloves
1 tsp Jeera/Cumin Seeds
Pepper Powder to taste
Creamy Creamy Sweet Corn and Spinach Soup
Method:
If using fresh or frozen sweet corn, microwave them on high for 2-3 minutes and keep aside.
Heat oil or melt butter in a pan and all the spices listed above. When cumin seeds start to crackle, add finely chopped garlic and fry them for half a minute. Mix in finely chopped onions and slit green chilli and cook till onions turns light golden in colour, about 2 minutes.
Add roughly chopped spinach/palak leaves with its tender stem and cook till the leaves starts to wilt, about 2 minutes.
Switch off the gas. Transfer all the contents to food processor and blend them to smooth puree.
Transfer this puree back into a pan and add milk, sweet corn kernels and salt and pepper to taste. Add about ½ cup or more of water to get required consistency. Bring the whole soup to a gentle boil.
Turn off the gas and mix in freshly squeezed lime juice just before serving. Serve this soup hot or warm topped with few corn kernels or cream if desired and enjoy this iron rich and delicious bowl of Creamy Sweet Corn and Spinach Soup.

- I didn’t cook the spinach too much as I wanted it to retain its nutrition, natural taste as well as its vibrant colour. But if you are not too keen on little raw tasting spinach, then simply cook for another 3-5 minutes.
- Add little more water or milk if you prefer little thin soup.

Each and every recipe I tried from your site is exceptional and I have raves for it. They do take some time to make but the taste is A+++ . I hope you will consider writing a cookbook!!
