Monsoon Spice has been around for a long time. I remember, when I was taking baby steps in the world of blogging, I would wait for Sia's posts and ogle at those larger than life food pictures. I loved the way she wove stories around food and made it so heart warming. So, it goes without saying that I did derive a lot of inspiration from Monsoon Spice. Farfalle in a Creamy Roasted Mushroom Sauce
Prep Time: 10 mins
Cooking Time: 30-35 mins
Serves: 2 people
Recipe Level: Easy/Beginner
Spice Level: Low
Shelf Life: Stays for 2 days, if refrigerated but tastes best when consumed fresh
Ingredients:
100g Farfalle/Bow Tie Pasta
A handful of Black Olives
A handful of fresh Parsley for garnish
1 tbsp grated Parmesan Cheese (optional)
Salt if needed
For the Sauce:
200g White Button Mushrooms
1 big White Onion
2 tbsp Olive Oil
½ cup Milk
2 tbsp grated Parmesan Cheese
2 stalks of fresh Rosemary
1 tsp dried Oregano
Salt as per Taste
- Cook Pasta as per package instructions. Drain, drizzle with olive oil and set aside
- Preheat the oven to 450F. In a bowl, add mushrooms, onion Oregano, some salt, olive oil and rosemary and toss to coat well. Arrange the mushrooms on a baking tray and let them bake in the oven for about 15-20 mins until the mushrooms turn slightly golden. Allow them to cool.
- In a blender, blend the roasted mushrooms and onion into a smooth paste using little milk.
- Heat olive oil in a pan, transfer the mushroom paste and stir. Add milk, 1 cup water, grated parmesan cheese and some salt. Allow it to simmer for about 5 mins. If the sauce is too thick, add some milk or water
- Add Pasta and olives into the mushroom sauce and mix well to coat. Let it simmer on low heat for about 2 mins.
- Transfer to individual serving bowl and garnish with grated Parmesan and chopped parsley before serving.
- Dig In.. Enjoi !!!
