After what felt like a longest winter, it’s starting to too feel much like summer now. And what better way to celebrate it by making some delicious ice lollies. How about some light, healthy, low-fat, creamy and no added sugar Blueberry Yogurt Ice Lollies?
Frozen yogurt ice lolly is no new recipe or concept for me. Growing up in a South Indian town where summer meant temperature shooting up the roof, the only way to keep the complaining kids quite was to making barrel full of sherbet or smoothies and freezer packed with homemade ice creams and ice lollies. When we kids sneaked out without drinking a glass of milk either mixed with almond-spice mix or Bournvita, she would pop the glass in the freezer and present us with chocolate flavoured or almond flavoured milk lollies! :) The mango lassi was my favourite summer treat and one fine scorching summer day, amma poured the leftover mango lassi into ice lolly moulds and from that day, mango lassi ice lolly became one of the most popular and loved frozen treats in our family.
With my own little boy who can live eating frozen treats 24/7, I am making more ice creams and ice lollies than ever! So instead of going for sugar loaded treats, I tend to make yogurt ice lollies sweetened with organic honey more as they are way healthier when one wants to eat them for breakfast. Although the ice cream and ice lolly season has just begun, I made these couple of weeks ago and what’s more, I even managed to shoot a recipe video on my own without any help! It took me couple of hours to shoot as I had to keep moving the tripod and camera around to make sure everything was in focus. The result is this delicious Blueberry Yogurt Ice Lolly and a backache which lasted for couple of days!
The ingredient list is short, with just 5 ingredients in total, and the recipe is so simple that even my 6 year old can make it without much help from me. Since LD is very fond of blueberries and we always have a bagful of them in fridge, it was an easy choice to use them in these berry yogurt smoothie ice lollies. There are mainly two ingredients, a fruit and yogurt and the sweetener of your choice. The vanilla and little splash of lime juice acts as flavouring. The berries work beautifully in this recipe and you can choose any berries of your choice. I have used low fat Greek yogurt which gives it a creamy texture to the ice lollies. Blend, pour and freeze! Blueberry Yogurt Ice Lolly (A simple and quick blueberry yogurt smoothie frozen treats sweetened with honey and flavoured with vanilla and lime) Prep Time: 5-10 mins Cooking Time: N/A Resting Time: 6-12 hours Recipe Level: Easy/Beginner Spice Level: N/A Makes: Around 15 ice lollies Shelf Life: Up to 2 weeks in freezer Serving Suggestion: Do you really need one? :)
Ingredients:
3 cups Greek Yogurt
1 cup Blueberries
½-¾ cup Honey (Adjust as per taste)
1 tsp Vanilla Extract or Seeds from 1 Vanilla Pod
Juice from ½ Lime (Optional, adjust as per taste)
Method:
Take Greek yogurt a blender. To this add honey, vanilla extract and lime juice and blend them all well. This will be the yogurt-vanilla flavoured smoothie if you want to make layered ice lolly. If not, proceed to step 3.
Pour half of the yogurt-vanilla into a bowl and reserve it for later use.
Add blueberries to remaining half of yogurt and blend them well.
Partially fill the ice lolly moulds with blueberry-yogurt and then top it with vanilla-yogurt to create layers. You can make either two layers or three layers depending on how you like it.
Pop some blueberries before closing the mould with lid or cling film and stick in ice lolly sticks before popping it in the freezer for 6-12 hours.
Take the ice lolly moulds from freezer and leave it on worktop for 5-10 minutes or simply place the ice lolly mould in a tray of hot water for couple of minutes for them to loosen up and ease them out of moulds. Enjoy these delicious Blueberry Yogurt Ice Lollies!
Sia’s Notes:
You can use any berries of your choice like strawberries, black berries, raspberries or combination of all.
You can puree the berries first and pass the puree through sieve to remove seeds or peels. I personally like the texture of seeds and skin of berries in ice lollies so I tend to keep them on.
You can also use any other sweetener of your choice in place of honey.
